Tomato Spinach Salad

Serves 2 Ingredients 1 large Roma tomato, thinly sliced 2 cups baby spinach 1/2 cup baby arugula 2 Tbsp extra virgin olive oil 1 1/2 tsp white balsamic vinegar 1/4 tsp sea salt 1/4 tsp pepper Directions Combine all ingredients together in a large bowl; gently toss to combine.
